Well this i never heard of, using the rind and only a small part of the red flesh. www.youtube.com/watch?v=WaMXS12nVVU&feature=player_embedded#Watermelon rind, the white part between the peel and red, can be sauteed, good texture, not much on flavor itself, does pick up spices and flavor of the dish.

I've had something made from watermelon rind. It was like a pickle those sweet bread and butter pickles.
