One large chicken breast coated with butter and baked on a bed of sliced tomatoes with sliced tomatoes on top.
One red bell pepper Cut top of like a Jack o' Lantern. Put small amount of tomato in the bottom then some chopped garlic. Pour some or all of juice from tomato into bell pepper. Add grains. I used pinto beans and lentils and sunflower seeds. Then covered with tomato and put the top on. at least an hour and a half for both the pepper and potato at 360. I add the chicken after about 45 minutes head start for the others.
The pepper simmers the stuffing in its shell and it is a simple hearty tasty addition to the meal and the pepper becomes very sweet and citrusy during the cooking process.
I added some Gorgonzola cheese crumbles and sprinkled some sunflower seeds and chopped garlic on the chicken for the final 10 minutes at which time I turned the oven onto broil to toast the seeds and garlic.
Toasting at the end of the cooking cycle works out better than adding them early.
One potato baked.

Sounds nice Dave. Summer has just ended here so in a month or so the winter cooking will start happening. mm mm
